Ingredients

2 1/4 cups Sugar

3/4 cup Vegetable Shortening

3 Bananas

3 Eggs

1 1/2 tsp Vanilla Extract

3 cups AP Flour

1 1/4 tsp Baking Soda

1 1/4 tsp Baking Powder

1 cup Buttermilk

1 1/2 cups Chopped Pecans

3 tbsp Brown Sugar

2 tbsp Butter

1 tbsp Cinnamon Sugar

How To Make

1. Preheat oven to 350F. Butter and flour two 8 x 4-inch loafpans..

2. Toasted pecans in the oven for seven minutes and let cool.

3. Cream sugar and shortening together with an electric mixer. Add mashed banana, eggs and vanilla. Mix well.

4. In a small bowl, combine flour, salt, baking powder and baking soda. Add to banana mixture alternately with buttermilk. Beat 7 minutes on medium speed until the batter appears whipped. Stir in pecans then pour into pans.

5. (TOPPING) Stir together 3 tablespoons brown sugar, 1/2 cup pecans, 1 tablespoon flour, 2 tablespoons melted butter, and 1 tbsp cinnamon. Sprinkle mixture evenly over batter.

6. Bake at 350F for 1 hour or until a long wooden pick inserted in center comes out clean and sides pull away from pan, shielding with aluminum foil last 15 minutes to prevent browning, if necessary. Cool bread in pans on wire racks 10 minutes. Remove from pans, and cool 30 minutes on wire racks before slicing.
